22: Meet Jo: A sustainability queen and plant-based food advocate

Updated: Jan 16

From the minute I announced the launch of TWW and what my intentions were surrounding it, local people got in touch and said 'you need to chat to Jo at the Blonde Beet'!

And when I finally sat down with her I knew why... Jo is bursting with positivity, drive and a passion for progressive sustainability; and through this she already has quite a 'following' . Of which I am now officially a part of.

Brought up by loving, progressive parents, Jo hasn't put any of that nurturing to waste and she's spent her education and her adult life focusing on planet earth and working in ecological and charitable roles that will help to sustain it. And given she's soon to be a parent herself, it will be interesting to see how that translates into her own future generation(s) approach to the same.

I can personally vouch for the deliciousness of her plant-based food, and even the nutritional value of it... Whereby once you've eaten it, you don't immediately feel bloated, and then 90 minutes later, feel hungry again. It's food that tastes great and feels great to eat. There's simply no down-side.

Enjoy.

Chops x

PS. There is a (constant) slight whistling in the background, which was her kitchen winding down for the evening (or that's what I thought it was... The Blonde Beet is in a very, very old building???!!). Please do you best to ignore it... even though I've now drawn extra attention to it. Thanks!
